Second day of kitchen training and service training for the gang, and so far, so good. 

The physical aspect of the restaurant is taking shape. Each day you see more and more workers coming in and out to clean, repair and install new items. The entire crew has worked in the space and everyone is excited about it. After all, it's still the honeymoon phase.

In the kitchen, some things happened that validated some of my old beliefs.  You can have a recipe but, if you don't understand it, it means nothing.  We had a few dishes miss the mark like we anticipated. We are not in Honolulu; we are in Maui and the products are different. We may have used different brands. It didn't multiply out well but we simply could not recapture what we did at King St. So, we kept working at it. Even though it set us back each time, it's part of the process.  All attitudes are great and positive. It's so nice to see new faces with fresh attitudes.
