Big Island Dairy Goat Cheese and Farmer Ed's Beets, Li hing Juice, Beet Coulis, Ho Farms Tomatoes, Ed lima's Mache
I really like this idea of li hing mui juice. We roasted the beets, pureed them, added the juice and also pickling juice for beets. Goat cheese and beets are a classic pairing. Adding li hing mui in this fashion adds our local flavor to this dish. We are still working on this presentation, but this combo will make the menu very soon as a special at Alan Wong's Honolulu.
