After graduating from Farrington High School, Derek began his culinary career with his first jobs at Little George’s Restaurant and the Waialae Country Club. He attended Kapiolani Community College for a year before venturing to Colorado Springs, working in a few restaurants while studying Business Administration at National College. Derek completed his formal culinary studies at the Culinary Institute of America (CIA) in Hyde Park, New York.
Returning to Hawaii, Derek completed an externship at the Hyatt Regency Waikiki, then joined the Four Seasons Hotel in Los Angeles. He subsequently accepted an international transfer to join the pre-opening team for The Regent Jakarta in Indonesia. After living and working in Asia for 23 years, he returned home to learn about cooking the Wong Way. Derek is proud to be a part of the team and ‘ohana at Alan Wong’s. pau
