Two part definition:
It’s the contemporary style of cooking in Hawaii today. It’s eclectic, east–west. It utilizes all of the ethnic influences found in Hawaii today and is representative of Hawaii being called the melting pot of the Pacific.

It utilizes the local products and ingredients as much as possible . . . taking local foods and flavors and giving it a contemporary twist.
