Mark Shishido, Wine Director

Mark grew up just a couple of blocks away from Alan Wong’s on King Street. His career in food and beverage began as a porter/bartender at the Hawaiian Regent Hotel. He subsequently progressed to assistant wine director at the Halekulani Hotel, then wine cellar master at the Hyatt Regency Waikiki where he began his involvement with the Master Sommelier Program. He expanded his experience to restaurant management at Bagwell’s, Michel’s and The Prince Court.

In 1998, Mark joined Alan Wong’s and the following year he was promoted to manager of The Pineapple Room. In January 2005, Mark became the Wine Director for Alan Wong’s Restaurants. His work takes him touring through boutique estates in France to purchase wines for the restaurants where he conducts wine classes for the staff. His philosophy about wine:  “Wine, like soulful food, should tell you a story and reflect a sense of place.” pau
