What is your favorite food memory and why?
Something that I always remember is when I was younger, there were a lot of times my mom would have some pipipi sitting on the table. She and I would sit there using needles to get them out and eating a ton of them. It sticks out in my memory for two reasons. It was something that just my mom and I would enjoy together, the rest of my family didn't care much for them. We also haven't eaten them in years.
What do you enjoy about working in the restaurant industry? What have you learned by working in the Front of the House?
I enjoy talking to the customers, especially if it is their first time in Hawaii or even if they have never dined in our restaurant before. It is always interesting to see their reactions when explaining our cuisine. I have learned how to multitask more and have learned to converse better with the customers.
The delicate balance of mentoring someone is not creating them in your own image, but giving them the opportunity to create themselves.
