This is a great entrée salad idea for the Pineapple Room for lunch.  In the summer time, it gets hot, so to eat a cold salad like this with jalapenos, mint, basil and rice noodles with chilled shrimp and braised pork was really satisfying and refreshing.  Hong and I actually worked together to get this done.  It kind of reminded me of  a noodle dish I had in Korea called Jjajangmyun, and it also reminded me of eating Vietnamese pho.  It reminded Hong of a Korean dish too, so it made me happy that our resident Korean expert, Hong, agreed that the flavors reminded both of us of the same thing.
